This is a very popular dish all along the Mediterranean region, and it's basically the same recipe anywhere you go. Ground meat is seasoned with some light spices and then grilled to perfection.
Recipe type: Beef and Lamb Dinners
Serves: 4 kabobs
  • [1/2] large yellow onion, chopped
  • [1/2] cup fresh Italian parsley
  • [3/4] lb. ground beef
  • [1/4] lb. ground lamb
  • 1 tsp. salt
  • [1/2] tsp. ground black pepper
  • [1/2] tsp. ground nutmeg
  • [1/2] tsp. seven spices
  1. Preheat a grill to medium heat.
  2. In a food processor fitted with a chopping blade, pulse yellow onion and Italian parsley for 30 seconds.
  3. In a medium bowl, combine onion-parsley mixture, beef, lamb, salt, black pepper, nutmeg, and seven spices. Form mixture into 4 (6-inch) kabobs.
  4. Grill kabobs, turning them over every 2 minutes, to cook on all sides.
  5. Serve warm with hummus and pita bread.
Tasty Tip
Many people don't like lamb. If you don't like it, you can omit the lamb and use 1 pound ground beef instead. (Although in this recipe, you really can't taste the lamb; it makes the kabob juicier.)
