These zucchini fritters are crunchy on the outside and fluffy on the inside. They're made with fresh zucchini, zesty herbs, and a light batter.

Ingredients
- 207mg sodium
- 2 large zucchini, grated
- 3 whole green onions, finely chopped
- [1/4] cup fresh Italian parsley, finely chopped
- 1 tsp. dried mint
- [1/2] tsp. cayenne
- 1 tsp. salt
- [1/2] tsp. ground black pepper
- 2 large eggs
- [1/2] cup all-purpose flour
- 3 TB. water
- 1 cup extra-virgin olive oil
Instructions
- In a large bowl, combine zucchini, green onions, Italian parsley, mint, cayenne, salt, black pepper, eggs, all-purpose flour, and water.
- In a 3-quart pot or fryer over high heat, heat extra-virgin olive oil to 325ºF.
- Drop batter into the fryer with a large tablespoon, and fry for 3 minutes per side or until golden brown. Do not overcrowd the pot. Remove fritters from the pot, and place on a plate lined with paper towels. Serve warm.
