These zucchini fritters are crunchy on the outside and fluffy on the inside. They're made with fresh zucchini, zesty herbs, and a light batter.

Ingredients

2 large zucchini, grated
3 whole green onions, finely chopped
[1/4] cup fresh Italian parsley, finely chopped
1 tsp.dried mint
[1/2] tsp.cayenne
1 tsp.salt
[1/2] tsp. ground black pepper
2 large eggs
[1/2] cupall-purpose flour
3 TB.water
1 cup extra-virgin olive oil
Instructions
In a large bowl, combine zucchini, green onions, Italian parsley, mint, cayenne, salt, black pepper, eggs, all-purpose flour, and water.
In a 3-quart pot or fryer over high heat, heat extra-virgin olive oil to 325ºF.
Drop batter into the fryer with a large tablespoon, and fry for 3 minutes per side or until golden brown. Do not overcrowd the pot. Remove fritters from the pot, and place on a plate lined with paper towels. Serve warm.
