Ingredients
- 1 (5-lb.) bone-in leg of lamb
- 10 whole cloves garlic
- 2 TB. minced garlic
- [1/3] cup lemon juice
- [1/3] cup extra-virgin olive oil
- 2 tsp. salt
- 1 tsp. ground black pepper
- 3 TB. fresh rosemary leaves, finely chopped
Instructions
- Preheat the oven to 475ºF.
- Using a sharp paring knife, cut 10 ([1/2]-inch) slits into leg of lamb. Stick 1 garlic clove in each slit.
- In a small bowl, combine garlic, lemon juice, extra-virgin olive oil, salt, black pepper, and rosemary. Rub dressing all over leg of lamb.
- Place the leg of lamb in a roasting pan, and roast for 30 minutes.
- Reduce heat to 350ºF, and cook for 1[1/2] more hours.
- Remove lamb from the oven and set aside for 20 minutes before cutting and serving.
