Juicy, tender roasted lamb seasoned with bright herbs, lemon juice, and aromatic garlic makes for a dinner to remember.

Ingredients
1 (5-lb.) bone-in leg of lamb
10 whole clovesgarlic
2 TB. minced garlic
[1/3] cuplemon juice
[1/3] cup extra-virgin olive oil
2 tsp.salt
1 tsp. ground black pepper
3 TB. fresh rosemary leaves, finely chopped
Instructions
Preheat the oven to 475ºF.
Using a sharp paring knife, cut 10 ([1/2]-inch) slits into leg of lamb. Stick 1 garlic clove in each slit.
In a small bowl, combine garlic, lemon juice, extra-virgin olive oil, salt, black pepper, and rosemary. Rub dressing all over leg of lamb.
Place the leg of lamb in a roasting pan, and roast for 30 minutes.
Reduce heat to 350ºF, and cook for 1[1/2] more hours.
Remove lamb from the oven and set aside for 20 minutes before cutting and serving.

Tasty Tip Whenever you're cooking a large piece of meat, it's always good to cook it low and slow. This helps dissolve the meat's connective tissue, which makes the meat tender.
