Talk about small bites of happiness. These slightly sweet butter cookies are bursting with the nuttiness of ground pistachios.

Serves: 36 cookies
  • 1 cup butter, at room temperature
  • 1 cup sugar
  • 1 large egg
  • 2 tsp. vanilla extract or flavoring
  • 2 cups all-purpose flour
  • 1 cup ground pistachios
  • 1 tsp. baking powder
  • [1/2] tsp. salt
  • 2 TB. confectioners' sugar
  1. In a blender, cream together butter and sugar for about 2 minutes.
  2. Beat in egg and vanilla extract for about 30 seconds.
  3. Blend in all-purpose flour, pistachios, baking powder, and salt until well combined.
  4. Spoon dough onto a sheet of plastic wrap. Using the plastic wrap, form dough into a 1[1/2]-inch log, and refrigerate for 1 hour.
  5. Preheat the oven to 375ºF. Line a baking sheet with parchment paper.
  6. Cut log into about 36 ([1/8]-inch) slices, and place slices 1 inch apart on the prepared baking sheet.
  7. Bake for 12 minutes or until edges start to turn slightly golden brown.
  8. Let cookies cool on the baking sheet for 5 to 10 minutes, dust with confectioners' sugar, and serve.
Tasty Tip
If you don't like pistachios, feel free to use another nut like walnuts, pecans, or macadamia nuts.
