Pistachio Cookies

- 1 cup butter, at room temperature
- 1 cup sugar
- 1 large egg
- 2 tsp. vanilla extract or flavoring
- 2 cups all-purpose flour
- 1 cup ground pistachios
- 1 tsp. baking powder
- [1/2] tsp. salt
- 2 TB. confectioners' sugar
- In a blender, cream together butter and sugar for about 2 minutes.
- Beat in egg and vanilla extract for about 30 seconds.
- Blend in all-purpose flour, pistachios, baking powder, and salt until well combined.
- Spoon dough onto a sheet of plastic wrap. Using the plastic wrap, form dough into a 1[1/2]-inch log, and refrigerate for 1 hour.
- Preheat the oven to 375ºF. Line a baking sheet with parchment paper.
- Cut log into about 36 ([1/8]-inch) slices, and place slices 1 inch apart on the prepared baking sheet.
- Bake for 12 minutes or until edges start to turn slightly golden brown.
- Let cookies cool on the baking sheet for 5 to 10 minutes, dust with confectioners' sugar, and serve.
Tasty Tip
If you don't like pistachios, feel free to use another nut like walnuts, pecans, or macadamia nuts.
