This recipe puts a Mediterranean twist on traditional meatloaf, integrating fresh herbs and spices with ground chicken, which makes it a bit more healthy as well.

Serves: 1 (9x5-inch) loaf
Ingredients
- 2 lb. ground chicken
- [1/3] cup plain breadcrumbs
- 1[1/2] tsp. salt
- 1 tsp. garlic powder
- 1 tsp. ground black pepper
- 1 tsp. paprika
- [1/2] tsp. dried oregano
- [1/2] tsp. dried thyme
- 2 TB. fresh basil, chopped
- 2 TB. fresh Italian parsley, chopped
- 1 large egg
- 1 large carrot, shredded
- 1 cup fresh or frozen green peas
- [1/2] cup sun-dried tomatoes, chopped
- 1 cup ketchup
Instructions
- Preheat the oven to 400ºF. Lightly coat all sides of a 9x5-inch loaf pan with olive oil spray.
- In a large bowl, combine chicken, breadcrumbs, salt, garlic powder, black pepper, paprika, oregano, thyme, basil, Italian parsley, egg, carrot, green peas, and sun-dried tomatoes.
- Transfer chicken mixture to the prepared pan, and even out top. Cover the pan with a piece of aluminum foil, and bake for 40 minutes.
- After 40 minutes have passed, pour ketchup over top of loaf and spread out evenly. Bake for 5 more minutes.
- Remove meatloaf from the oven, and let rest for 10 minutes before slicing and serving warm.
