This recipe puts a Mediterranean twist on traditional meatloaf, integrating fresh herbs and spices with ground chicken, which makes it a bit more healthy as well.
Preheat the oven to 400ºF. Lightly coat all sides of a 9x5-inch loaf pan with olive oil spray.
In a large bowl, combine chicken, breadcrumbs, salt, garlic powder, black pepper, paprika, oregano, thyme, basil, Italian parsley, egg, carrot, green peas, and sun-dried tomatoes.
Transfer chicken mixture to the prepared pan, and even out top. Cover the pan with a piece of aluminum foil, and bake for 40 minutes.
After 40 minutes have passed, pour ketchup over top of loaf and spread out evenly. Bake for 5 more minutes.
Remove meatloaf from the oven, and let rest for 10 minutes before slicing and serving warm.
