This dish is a great way to prepare protein-filled green beans without any fatty creams. Here, mild onions mingle with sweet tomatoes and a touch of garlic, and all are combined with fresh green beans.

Ingredients
- [1/4] cup extra-virgin olive oil
- 2 medium white onions, chopped
- 1[1/2] tsp. salt
- 3 medium tomatoes, chopped
- [1/4] cup minced garlic
- [1/2] tsp. ground black pepper
- [1/2] tsp. cayenne
- 4 cups green beans, trimmed and cut into 1-in. pieces
Instructions
- In a large, 3-quart pot over medium heat, heat extra-virgin olive oil. Add white onions, and cook for 5 minutes.
- Add salt, tomatoes, and garlic, and cook for 10 minutes.
- Add black pepper, cayenne, and green beans, and toss together. Cover and cook for 10 minutes.
- Serve warm or at room temperature with pita bread.

If you like a little more heat, you could use 1 teaspoon crushed red pepper flakes instead of the cayenne called for in this recipe.
