This dish is a great way to prepare protein-filled green beans without any fatty creams. Here, mild onions mingle with sweet tomatoes and a touch of garlic, and all are combined with fresh green beans.

Ingredients
[1/4] cup extra-virgin olive oil
2 medium white onions, chopped
1[1/2] tsp.salt
3 medium tomatoes, chopped
[1/4] cup minced garlic
[1/2] tsp. ground black pepper
[1/2] tsp.cayenne
4 cupsgreen beans, trimmed and cut into 1-in. pieces
Instructions
In a large, 3-quart pot over medium heat, heat extra-virgin olive oil. Add white onions, and cook for 5 minutes.
Add salt, tomatoes, and garlic, and cook for 10 minutes.
Add black pepper, cayenne, and green beans, and toss together. Cover and cook for 10 minutes.
Serve warm or at room temperature with pita bread.
Notes
Tasty Tip If you like a little more heat, you could use 1 teaspoon crushed red pepper flakes instead of the cayenne called for in this recipe.
