Bulgur Tomato Pilaf

In this dish, earthy bulgur is simmered in a meaty tomato sauce filled with chunks of tomatoes and onions.

Serves: 6 cups
Ingredients
- 1 lb. ground beef
- 3 TB. extra-virgin olive oil
- 1 large yellow onion, finely chopped
- 2 medium tomatoes, diced
- 1[1/2] tsp. salt
- 1 tsp. ground black pepper
- 2 cups plain tomato sauce
- 2 cups water
- 2 cups bulgur wheat, grind #2
Instructions
- In a large, 3-quart pot over medium heat, brown beef for 5 minutes, breaking up chunks with a wooden spoon.
- Add extra-virgin olive oil and yellow onion, and cook for 5 minutes.
- Stir in tomatoes, salt, and black pepper, and cook for 5 minutes.
- Add tomato sauce and water, and simmer for 10 minutes.
- Add bulgur wheat, and cook for 2 minutes. Remove from heat, cover, and let sit for 5 minutes. Uncover, fluff bulgur with a fork, cover, and let sit for 5 more minutes.
- Serve warm.

Tasty Tip
If you like things spicy, add some crushed red pepper flakes to this recipe. Or serve with a finely chopped jalapeño pepper on top.
