In this dish, earthy bulgur is simmered in a meaty tomato sauce filled with chunks of tomatoes and onions.

Serves: 6 cups
Ingredients
1 lb. ground beef
3 TB. extra-virgin olive oil
1 large yellow onion, finely chopped
2 medium tomatoes, diced
1[1/2] tsp.salt
1 tsp. ground black pepper
2 cups plain tomato sauce
2 cupswater
2 cupsbulgur wheat, grind #2
Instructions
In a large, 3-quart pot over medium heat, brown beef for 5 minutes, breaking up chunks with a wooden spoon.
Add extra-virgin olive oil and yellow onion, and cook for 5 minutes.
Stir in tomatoes, salt, and black pepper, and cook for 5 minutes.
Add tomato sauce and water, and simmer for 10 minutes.
Add bulgur wheat, and cook for 2 minutes. Remove from heat, cover, and let sit for 5 minutes. Uncover, fluff bulgur with a fork, cover, and let sit for 5 more minutes.
Serve warm.
Notes
Tasty Tip If you like things spicy, add some crushed red pepper flakes to this recipe. Or serve with a finely chopped jalapeño pepper on top.
