Mediterranean Doughnuts

These bite-size dough balls are flavored with traditional Mediterranean flavors and a touch of sweetness.

Serves: 3 dozen doughnuts
Ingredients
- 1 TB. active dry yeast
- 1 cup warm water
- 3 TB. sugar
- 1 large potato, boiled, peeled, and mashed
- 2 cups all-purpose flour
- 1 tsp. cinnamon
- 8 cups vegetable oil
- 4 cups Simple Syrup (recipe in Chapter 22)
Instructions
- In a large bowl, combine yeast, warm water, and sugar. Set aside for 5 minutes.
- Add mashed potato, all-purpose flour, and cinnamon, and stir to combine. Cover with plastic wrap, and let sit for 1 hour.
- In a large pot over medium heat, bring vegetable oil to 365ºF.
- Pour Simple Syrup in a large bowl.
- Spoon up about 2 tablespoons dough mixture, drop into hot oil, and fry for 2 or 3 minutes or until dark brown.
- Spoon out fried doughnuts from oil, and drop into Simple Syrup to soak for about 5 minutes.
- Spoon out doughnuts from Simple Syrup, and place on a plate. Serve at room temperature.
