These bite-size dough balls are flavored with traditional Mediterranean flavors and a touch of sweetness.

Serves: 3 dozen doughnuts
Ingredients
1 TB. active dry yeast
1 cupwarm water
3 TB.sugar
1 large potato, boiled, peeled, and mashed
2 cupsall-purpose flour
1 tsp.cinnamon
8 cupsvegetable oil
4 cupsSimple Syrup (recipe in Chapter 22)
Instructions
In a large bowl, combine yeast, warm water, and sugar. Set aside for 5 minutes.
Add mashed potato, all-purpose flour, and cinnamon, and stir to combine. Cover with plastic wrap, and let sit for 1 hour.
In a large pot over medium heat, bring vegetable oil to 365ºF.
Pour Simple Syrup in a large bowl.
Spoon up about 2 tablespoons dough mixture, drop into hot oil, and fry for 2 or 3 minutes or until dark brown.
Spoon out fried doughnuts from oil, and drop into Simple Syrup to soak for about 5 minutes.
Spoon out doughnuts from Simple Syrup, and place on a plate. Serve at room temperature.
Notes
Mediterranean Morsel Potato might seem an odd ingredient to have in a dessert recipe! Here, it helps make the doughnuts a bit more dense and also acts as a binder.
