This yogurt-cucumber sauce has a cool and refreshing flavor, thanks to the tangy Greek yogurt and the refreshing mint. It's a great accompaniment to any spicy dish.

- 2 cups plain Greek yogurt
- 3 medium Persian cucumbers, finely diced
- 2 TB. fresh lemon juice
- 1 TB. minced garlic
- [1/2] tsp. salt
- 1 tsp. dried mint
- [1/2] cup water
Instructions
- In a large bowl, combine Greek yogurt, Persian cucumbers, lemon juice, garlic, salt, mint, and water, and stir for about 15 seconds.
- Serve immediately, or refrigerate in an airtight container for up to 3 days.

Many regions make tzatziki sauce slightly different. The Greek use fresh dill, while the Lebanese use dried mint. You can use either one, depending on what flavor you like. If you want to use dill, replace the dried mint called for with 1 tablespoon chopped fresh dill.
