Tea is a big part of the Mediterranean diet, and if you're drinking tea for brunch, you need something to dunk into it! This sweet bread filled with a smooth sweet date paste is the perfect breakfast if you wake up with a sweet tooth.

Serves: 12 rolls
  • 2[3/4] cups all-purpose flour
  • [1/4] cup dry milk
  • [1/4] cup sugar
  • 1[1/4] tsp. salt
  • 1 TB. instant yeast
  • 3 large eggs
  • [1/3] cup plus 1 TB. water
  • 10 TB. butter
  • 12 medjool dates(pitted)
  • 1 TB. orange blossom water
  • [1/2] tsp. cinnamon
  • 1 large egg white
  1. In a food processor fitted with a dough attachment or in a blender, knead all-purpose flour, dry milk, sugar, salt, instant yeast, eggs, [1/3] cup water, and 8 tablespoons butter for 15 minutes.
  2. Transfer dough to a bowl lightly sprayed with olive oil spray, cover the bowl with plastic wrap, and let rise in the refrigerator for 24 hours.
  3. In a food processor fitted with a chopping blade, blend medjool dates, orange blossom water, and cinnamon for 2 minutes or until smooth.
  4. Grease a 12-cup muffin tin with remaining 2 tablespoons butter.
  5. Form dough into 12 equal pieces. Spoon 1 tablespoon date mixture into center of each dough piece, tightly seal dough around date mixture, and place seal side down into the prepared muffin tin.
  6. Set aside dough to rise for 1 hour.
  7. Preheat the oven to 375ºF.
  8. In a small bowl, whisk together egg white and remaining 1 tablespoon water. Brush each roll with egg wash.
  9. Bake for 30 minutes.
  10. Remove rolls from the oven, and let rest for 20 minutes before serving.
