Dumplings in Yogurt Sauce

This is a Mediterranean twist on dumplings. They're cooked in a yogurt sauce and filled with seasoned beef.

Serves: 12 dumplings
Ingredients
- 1 cup plus 4 TB. all-purpose flour
- 2[1/3] cups water
- 5 TB. extra-virgin olive oil
- 2 tsp. salt
- [1/2] lb. ground beef
- [1/2] tsp. ground black pepper
- [1/2] tsp. seven spices
- 6 cups plain Greek yogurt
- 2 TB. cornstarch
- 2 TB. minced garlic
- 1 TB. dried mint
Instructions
- In a small bowl, knead together 1 cup all-purpose flour, [1/3] cup water, 3 tablespoons extra-virgin olive oil, and [1/2] teaspoon salt. Set aside to rest for 15 minutes.
- In a small saucepan over medium heat, brown beef for 5 minutes, breaking up chunks with a wooden spoon.
- Stir in remaining 2 tablespoons extra-virgin olive oil, [1/2] teaspoon salt, black pepper, and seven spices, and cook for 3 more minutes. Set aside.
- Flour a rolling pin and countertop. Divide dough into 12 pieces, and roll out into 3-inch circles. Place 1 tablespoon meat filling in center of each circle.
- Using your fingers, dab some water along half of dough circle. Fold dough over filling, forming a half moon, and pinch together dough to seal.
- In a large pot over medium-low heat, heat Greek yogurt.
- In a small cup, dissolve cornstarch in remaining 2 cups water. Add to Greek yogurt.
- Stir in garlic, remaining 1 teaspoon salt, and mint. Bring to a simmer, and cook for about 5 minutes.
- Reduce heat to low. Drop dumplings into yogurt, and cook for 10 minutes.
- Serve warm.

Don't overstir the sauce after you add the dumplings. This could cause the dumplings to break and clump together. Instead, gently move your spoon around the pot two or three times.
