I love football, probably more than any sport, and when the season is over, yes I get depressed. But today I’m celebrating the Superbowl, not only is my favorite team playing, but I get to make and eat good food and not feel guilty. Â This year I decided to forego the pizza, since it takes up to much room in your tummy and doesn’t leave room for other food. I made my awesome chili, hot dogs with sauerkraut, coleslaw, and baked chicken wing.
The hotdogs are self explanatory, I boiled the hotdogs and then poured off the water and fried them a few minutes with 1tb of olive oil. For the wings, those were pretty easy too, Instead of frying the wings, I bake them on a baking sheet at 500 degrees for 1 hour, then put them in a bowl and toss them with Frank’s red hot wing sauce. Â The coleslaw is easy to, 4 cups shredded cabbage, 1 cup shredded carrot, 1 cup light mayonnaise, 3tb sugar, 3tb apple cider vinegar 1tb lemon juice, 3tb heavy cream, 1/2 tsp salt, 1/2 tsp black pepper, and 3tb finely chopped onion. Â Mix everything together and refrigerate for at least 30 minutes before serving. Â The chili is a bit more complicated: 1lb ground beef, 1 cup finely chopped onion, 1 cup finely chopped red bell pepper, 1tb fresh minced garlic, 1 cup mashed red kidney beans, 3 cups kidney beans (drained), 2 cups plain tomato sauce, 2 cup vegetable broth, 1 tsp salt, 3 tb chili seasoning. Brown the beef in a big pot for about 5 minutes, add the onions, red peppers, garlic, and salt, cook for another 5 minutes. Â Add the mashed red beans, the drained red beans, vegetable broth, tomato sauce, and chili seasoning, simmer on low for about 10-15 minutes. Â Serve warm and top with shredded cheddar cheese, fresh chopped onions, and sour cream.
And that’s it, that’s my superbowl supper…now let’s hope my team WINS!!!!!
