These bite-size date treats are naturally sweet with a nice, toasted nutty flavor, thanks to the walnuts.

Ingredients
- [3/4] cup walnuts
- 12 medjool dates, pitted
- [1/2] cup butter, melted
- 1 cup pistachios, ground
- 1 cup coconut flakes
Instructions
- Preheat the oven to 450ºF.
- Evenly spread walnuts on a baking sheet, and toast for 5 minutes.
- In a food processor fitted with a chopping blade, blend toasted walnuts for 30 seconds or until evenly ground. Transfer walnuts to a medium bowl.
- In the food processor, blend medjool dates and butter for 2 minutes until mixture resembles a paste.
- Add date paste to ground walnuts, and mix to combine.
- Place ground pistachios in a small bowl, and place coconut flakes in a separate small bowl.
- Spray a bit of cooking spray on your hands, and spoon about 2 tablespoons date mixture into your hands and roll to form a ball. Immediately roll date ball into either ground pistachios or coconut flakes.
- Place each date ball in a mini cupcake liner, and serve.

If you want the date balls to become a bit firmer, refrigerate them for 30 minutes before serving.
