I make this dish a lot during the summer, when I can find fresh fava beans. I love how the garlic, cilantro, and lemon give the beans a huge flavor kick and make this dish irresistible.

Serves: 6 cups
Ingredients
  • 3 TB. extra-virgin olive oil
  • 1 large yellow onion, chopped
  • 1 tsp. salt
  • 8 cups fresh green fava beans (2 lb.)
  • 3 TB. minced garlic
  • 2 cups fresh cilantro, finely chopped
  • 1 large lemon, cut in [1/2]
Instructions
  1. In a large, deep, skillet over medium heat, heat extra-virgin olive oil. Add yellow onion and [1/2] teaspoon salt, and saute for 5 minutes.
  2. Wash and dry fava beans. Cut off stems, pull down to remove stringy veins, and repeat on other side. Chop bean pod into [1/2]-inch pieces.
  3. Add fava beans to onions, and toss. Reduce heat to low, cover, and cook for 20 minutes, stirring every 5 minutes.
  4. Add remaining [1/2] teaspoon salt, garlic, and cilantro, and toss to combine. Cook, uncovered, for 5 minutes.
  5. Spoon beans onto a plate, and squeeze [1/2] of lemon over beans.
  6. Serve with remaining lemon half on the side.

This protein- and fiber-rich dish goes great with brown rice and can become an entire meal on its own.
