Lemon Cilantro Shrimp

I love shrimp with a lot of flavor, and this dish certainly has flavor, thanks to the zesty lemon, fresh herbs, and a little punch of garlic.
Recipe type: Meaty Mediterranean Lunches
Serves: 5 cups
Ingredients
  • 3 TB. extra-virgin olive oil
  • 2 TB. minced garlic
  • 1 lb. fresh medium shrimp (about 36 to 40), shells and veins removed
  • [1/2] tsp. salt
  • [1/2] tsp. ground black pepper
  • [1/2] tsp. cayenne
  • [1/4] cup fresh lemon juice
  • [1/2] cup chopped fresh cilantro
Instructions
  1. In a large skillet over medium heat, heat extra-virgin olive oil. Add garlic, and cook for 1 minute.
  2. Add shrimp, salt, black pepper, and cayenne; toss; and cook for 3 minutes.
  3. Add lemon juice and cnullantro, toss, and cook for 1 more minutes.
  4. Serve warm.
Notes
Mediterranean Morsel
The worst thing you can do to shrimp is overcook it; they become rubbery and hard to chew. Remember, when you remove the shrimp from the heat, they continue to cook, so don't overcook them while they're in the pan.
