Kibbeh Nayeh is raw, spiced beef mixed with bulgur wheat and eaten smeared on pita bread with veggies and extra-virgin olive oil.

Ingredients
  • [1/2] cup bulgur wheat, grind #1
  • 1 cup warm water
  • [1/4] cup toasted walnuts
  • 3 fresh basil leaves
  • 2 TB. fresh parsley, chopped
  • [1/2] medium white onion, chopped
  • [1/2] large red bell pepper, ribs and seeds removed, and roughly chopped
  • 1 tsp. crushed red pepper flakes
  • 1 tsp. paprika
  • 1 tsp. salt
  • [1/2] tsp. ground black pepper
  • [1/4] tsp. ground cloves
  • [1/4] tsp. cumin
  • [1/4] tsp. ground cinnamon
  • [1/2] tsp. dried ground sage
  • [1/4] tsp. ground allspice
  • [1/4] tsp. ground nutmeg
  • [1/4] tsp. ground coriander
  • [1/2] lb. lean ground chuck beef
  • 3 TB. extra-virgin olive oil
Instructions
  1. In a medium bowl, combine bulgur wheat and warm water. Set aside for 30 minutes.
  2. In a food processor fitted with a chopping blade, blend bulgur, walnuts, basil, parsley, white onion, and red bell pepper for 1 minute.
  3. Add crushed red pepper flakes, paprika, salt, black pepper, cloves, cumin, cinnamon, sage, allspice, nutmeg, and coriander, and blend for 30 seconds.
  4. Add ground chuck, and blend for 1 minute.
  5. Spread meat mixture on a plate, drizzle extra-virgin olive oil on top, and serve with pita bread and fresh vegetables.
