Hummus Appetizer Bites

These hummus bites are great as hors d'oeuvres for a party or a healthy snack before dinner. They deliver a mouthful of smooth and tangy hummus atop a flaky crust.

Serves: 12 bites
Ingredients
- 1[1/4] cups all-purpose flour
- [1/2] tsp. salt
- 5 TB. cold butter
- 2 TB. vegetable shortening
- [1/4] cup ice water
- 1 batch Traditional Hummus (recipe in Chapter 12)
- 1 tsp. paprika
- 12 kalamata olives
- 12 fresh parsley leaves
Instructions
- In a food processor fitted with a chopping blade, pulse 1 cup all-purpose flour and salt 5 times.
- Add cold butter and vegetable shortening, and pulse for 1 minute or until mixture resembles coarse meal.
- Continue to pulse while adding water for about 1 minute. Test dough; if it holds together when you pinch it, it doesn't require any additional moisture. If it does not come together, add another 3 tablespoons water.
- Remove dough from the food processor, place in a plastic bag, form into a flat disc, and refrigerate for 30 minutes.
- Preheat the oven to 425ºF.
- Remove dough from the plastic bag, and dust both sides with flour. Sprinkle your counter with flour.
- Using a rolling pin, roll out dough to [1/4] inch thickness. Using a 2-inch circle cookie cutter, cut out 12 circles of dough. Gently mold dough circles into a mini muffin tin, and using a fork, gently poke dough.
- Bake for 10 minutes. Remove from the oven, and set aside to cool.
- Spoon about 1 tablespoon Traditional Hummus on top of each cooled piecrust, sprinkle with paprika, and top with add 1 kalamata olive and 1 parsley leaf each. Serve immediately or refrigerate.

If you don't have time to make the piecrust, you can purchase ready-made piecrust and save a lot of time. I like to make it myself because I can control the amount of fat I add to it.
