This chicken stew boasts an array of fresh vegetables and vibrant tomato sauce. It's fantastic on its own or with a bowl of pasta or rice.

Serves: 10 cups
Ingredients
  • 4 TB. extra-virgin olive oil
  • 2 (8-oz.) boneless skinless chicken breasts, cut into [1/2]-in. cubes
  • 1 large red onion, chopped
  • [1/2] large yellow bell pepper, ribs and seeds removed, and chopped
  • [1/2] large red bell pepper, ribs and seeds removed, and chopped
  • [1/2] large green bell pepper, ribs and seeds removed, and chopped
  • 1 cup crimini mushrooms, sliced
  • 3 large carrots, sliced
  • 1[1/2] tsp. salt
  • 3 TB. minced garlic
  • 3 cups plain tomato sauce
  • 2 cups water
  • 1 tsp. paprika
  • 1 tsp. cayenne
  • 1 tsp. ground black pepper
  • [1/2] cup fresh parsley, finely chopped
  • 1 TB. sumac
Instructions
  1. In a large, 3-quart pot over medium heat, heat extra-virgin olive oil. Add chicken, and cook for 5 minutes.
  2. Add red onion, yellow bell pepper, red bell pepper, green bell pepper, crimini mushrooms, carrots, and salt, and cook for 5 minutes.
  3. Add garlic, tomato sauce, water, paprika, cayenne, black pepper, and parsley. Stir and simmer for 10 minutes.
  4. Serve warm with a sprinkle of sumac and a side of pasta or rice.

Definition
Sumac is the fruit of a flowering plant that's dried and ground. It has a tart, tangy flavor.
