Fig trees are abundant along the Mediterranean because the weather creates a perfect growing environment for them. The naturally sweet figs they produce are great for desserts.

Ingredients
- [1/2] cup plus 3 TB. butter, at room temperature
- [1/4] cup plus 2 TB. sugar
- 1 tsp. vanilla extract or flavoring
- 1[1/4] cups all-purpose flour
- 1[1/2] cups dried figs, chopped
- 1 cup hot water
- [1/2] cup walnuts
- [1/4] cup brown sugar, packed
- [1/2] cup instant oats
- [1/2] tsp. ground cinnamon
- [1/2] tsp. ground nutmeg
- [1/2] tsp. salt
Instructions
- In a medium bowl, and using an electric mixer on medium-high speed, cream together [1/2] cup butter, [1/4] cup sugar, and vanilla extract for 2 minutes.
- Add 1 cup all-purpose flour, and blend for 30 seconds.
- Place chopped figs in a small bowl, pour in hot water, and let them sit for 20 minutes.
- Preheat the oven to 350ºF.
- Press dough into the bottom of a 9x9-inch pan, and bake for 10 minutes.
- Add walnuts to figs, and mix well, slightly smashing with the back of a fork. Evenly distribute fig mixture over crust in the pan.
- In a small bowl, combine remaining [1/4] cup flour, brown sugar, instant oats, cinnamon, nutmeg, and salt.
- Using a pastry cutter or fork, cut remaining 3 tablespoons butter into oat mixture until you get a crumbly mixture. Spoon crumble topping over fig filling, and bake for 20 minutes.
- Let bars cool for 1 hour before cutting and serving.

For a nuttier flavor, add [1/4] cup sesame seeds to the crumb topping.
