Beef-Stuffed Baked Potatoes

Here, tender potatoes are stuffed with a seasoned meat filling and baked in an earthy tomato sauce. This filling dish is a good source of fiber and protein.

Serves: 6 potatoes
Ingredients
- 1 lb. ground beef
- 1 large white onion, finely chopped
- 4 TB. extra-virgin olive oil
- 1 TB. seven spices
- 2 tsp. salt
- 6 large potatoes, peeled
- 1 (16-oz.) can plain tomato sauce
- 1 TB. fresh thyme
- 1 tsp. dried oregano
- 1 tsp. ground black pepper
- [1/2] tsp. garlic powder
Instructions
- In a large skillet over medium heat, brown beef for 5 minutes, breaking up chunks with a wooden spoon.
- Add white onion, 2 tablespoons extra-virgin olive oil, seven spices, and 1 teaspoon salt, and cook for 5 minutes.
- Preheat the oven to 450ºF.
- Trim bottoms of potatoes so they'll stand on end. Cut off the top [1/4] of potatoes, and set aside. Core out inside of potatoes and set aside to use in another recipe.
- Stand potatoes inside a large casserole dish. Fill each potato with 3 tablespoons meat mixture, and place potato tops back on potatoes. Evenly drizzle potatoes with remaining 2 tablespoons extra-virgin olive oil, and bake for 15 minutes.
- Meanwhile, in a 2-quart pot over medium heat, combine tomato sauce, remaining 1 teaspoon salt, thyme, oregano, black pepper, and garlic powder. Simmer for 10 minutes.
- After potatoes have baked for 15 minutes, pour sauce mixture in the casserole dish around potatoes, and bake for 10 minutes.
- Serve warm.

If you don't want beef, you can replace it with lamb or even ground turkey instead.
