Mediterranean Bread Pudding (Aish el Saraya)

In this dessert, layered pieces of toasted bread are soaked in a flavored syrup and layered with a rich custard.

Ingredients
- 8 slices white bread, crust removed
- 1 cup sugar
- [1/2] cup water
- 1 TB. fresh lemon juice
- 2 cups Simple Syrup (recipe later in this chapter)
- 4 cups Ashta Custard (recipe later in this chapter)
- [1/2] cup coconut flakes, toasted
- [1/2] cup pistachios, ground
- 1 strawberry, sliced
Instructions
- Preheat the oven to 450ºF.
- Place slices of bread on a baking sheet, and toast for 10 minutes or until bread is golden brown and dry.
- In a small saucepan over medium-low heat, combine sugar, water, and lemon juice. Simmer for 5 to 7 minutes or until sugar reaches a dark golden brown color.
- Carefully pour hot dark brown syrup into an 8x8-inch baking dish, shifting the dish from side to side to spread syrup around bottom of dish.
- Place 4 slices of bread on top of brown syrup. Pour 1 cup of Simple Syrup over bread, spread 2 cups Ashta Custard over bread, and add another layer of 4 slices of bread. Pour remaining 1 cup Simple Syrup over bread, and spread remaining 2 cups Ashta Custard over top bread layer.
- Cover the dish with plastic wrap, and refrigerate for 4 hours.
- Decorate top of dish with toasted coconut, pistachios, and strawberry slices, and serve.
