Tomato and Cucumber Salad

This salad reminds me of summers in Michigan. My mom used to make this salad when it was hot outside and she didn't feel like cooking. It goes great with anything, even a cheese or hummus sandwich. The light combination of cucumbers, tomatoes, and herbs makes this salad very refreshing.

Serves: 6 cups
Ingredients
- 4 medium Persian cucumbers, diced
- 2 medium tomatoes, diced
- 1 medium white or red onion, chopped
- [1/4] cup flat-leaf parsley, finely chopped
- 3 TB. fresh mint, finely chopped
- 1 TB. minced garlic
- [1/4] cup fresh lemon juice
- [1/4] cup extra-virgin olive oil
- [1/2] tsp. salt
Instructions
- In a large bowl, combine Persian cucumbers, tomatoes, white onion, flat-leaf parsley, and mint.
- In a small bowl, combine garlic, lemon juice, extra-virgin olive oil, and salt.
- Pour dressing over vegetables, and toss until well dressed.
- Serve immediately.

Tasty Tip
Always mix the dressing together in a separate bowl before adding it to the vegetables to avoid getting a mouthful of garlic or any other single dressing ingredient. If you're a lettuce lover, you can easily toss in any lettuce you like to this salad. If it's difficult to find Persian cucumbers, you can use any cucumber you can find.
