Spinach Salad

8 cups
Prep time: Total time:

  • 6 cups baby spinach, washed
  • 2 medium tomatoes, chopped
  • 1 medium red onion, sliced
  • [1/4] cup fresh lemon juice
  • 3 TB. extra-virgin olive oil
  • 1 TB. apple cider vinegar
  • 1 TB. minced garlic
  • 1 TB. sumac
  • 1 tsp. dried mint
  • [1/2] tsp. salt

In a large bowl, add spinach, tomatoes, and red onions.

In a small bowl, whisk together lemon juice, extra-virgin olive oil, apple cider vinegar, garlic, sumac, mint, and salt.

Pour dressing over spinach mixture, toss to coat, and serve immediately.

Tasty Tip
Be sure to toss the salad together with the dressing right before serving. The spinach wilts very easily, and you want your salad to be as fresh and crisp as possible.
