This recipe is very popular in the countries that border the Mediterranean on the South. It's a stew made with chicken and mallow leaves with refreshing cilantro and lemon.

Jew’s Mallow Stew (Mulukhiya)

Ingredients

  • 2 whole chicken thighs , including drumstick
  • 1 (2-in.) cinnamon stick
  • 2 bay leaves
  • 8 cups water
  • 2 tsp. salt
  • [1/2] cup extra-virgin olive oil
  • 6 cups rehydrated Jew's mallow leaves , drained
  • 1 large yellow onion , chopped
  • 6 TB. minced garlic
  • 1 cup fresh cilantro , finely chopped
  • [1/2] tsp. cayenne
  • [1/2] cup fresh lemon juice

Directions

In a large pot over medium heat, combine chicken thighs, cinnamon stick, bay leaves, water, and 1 teaspoon salt. Cook for 30 minutes. Skim off any foam that comes to the top.

Meanwhile, in another large pot over medium heat, heat [1/4] cup extra-virgin olive oil. Add Jew's mallow leaves, and cook, tossing leaves, for 10 minutes. Remove leaves, and set aside.

Reduce heat to medium-low. Add remaining [1/4] cup extra-virgin olive oil, yellow onion, and 3 tablespoons garlic, and cook for 5 minutes.

Return Jew's mallow leaves to onions. Add 8 cups chicken broth strained the first pot to onions and Jew's mallow leaves in the second pot. Add remaining 1 teaspoon salt, and cook for 1 hour.

Meanwhile, separate chicken meat from bones. Discard bones and remaining contents of first pot.

After leaves have been cooking for 1 hour, add chicken, cilantro, cayenne, and remaining 3 tablespoons garlic, and cook for 20 more minutes.

Add lemon juice, and cook for 10 more minutes.

Serve with brown rice.

Definition
Jew's mallow leaves are leaves of the jute plant and are high in fiber. They're usually sold dried, so to rehydrate the leaves, place them in a large bowl, cover completely with water, and set aside to soak for about 3 hours. Drain, add more water to cover, and soak for 1 more hour.
