This recipe puts a Mediterranean twist on traditional meatloaf, integrating fresh herbs and spices with ground chicken, which makes it a bit more healthy as well.

Serves: 1 (9x5-inch) loaf
Ingredients
  • 2 lb. ground chicken
  • [1/3] cup plain breadcrumbs
  • 1[1/2] tsp. salt
  • 1 tsp. garlic powder
  • 1 tsp. ground black pepper
  • 1 tsp. paprika
  • [1/2] tsp. dried oregano
  • [1/2] tsp. dried thyme
  • 2 TB. fresh basil, chopped
  • 2 TB. fresh Italian parsley, chopped
  • 1 large egg
  • 1 large carrot, shredded
  • 1 cup fresh or frozen green peas
  • [1/2] cup sun-dried tomatoes, chopped
  • 1 cup ketchup
Instructions
  1. Preheat the oven to 400ºF. Lightly coat all sides of a 9x5-inch loaf pan with olive oil spray.
  2. In a large bowl, combine chicken, breadcrumbs, salt, garlic powder, black pepper, paprika, oregano, thyme, basil, Italian parsley, egg, carrot, green peas, and sun-dried tomatoes.
  3. Transfer chicken mixture to the prepared pan, and even out top. Cover the pan with a piece of aluminum foil, and bake for 40 minutes.
  4. After 40 minutes have passed, pour ketchup over top of loaf and spread out evenly. Bake for 5 more minutes.
  5. Remove meatloaf from the oven, and let rest for 10 minutes before slicing and serving warm.
Notes
Tasty Tip
If you're a fan of turkey, this is a great recipe to replace the ground chicken with ground turkey.
