Beef and Potatoes with Tahini Sauce

This is an easy yet tasty dish to make. Baked ground beef and tender potatoes with a creamy tahini sauce will satisfy your hunger craving.

Serves: 1 (9-inch) casserole
Ingredients
  • [1/2] large yellow onion
  • 1 lb. ground beef
  • 2[1/2] tsp. salt
  • [1/2] tsp. ground black pepper
  • 6 small red potatoes, washed
  • 3 TB. extra-virgin olive oil
  • 2 cups plain Greek yogurt
  • [3/4] cup tahini paste
  • 1[1/2] cups water
  • [1/4] cup fresh lemon juice
  • 1 TB. minced garlic
  • [1/2] cup pine nuts
Instructions
  1. Preheat the oven to 425ºF.
  2. In a food processor fitted with a chopping blade, blend yellow onion for 30 seconds.
  3. Transfer onion to a large bowl. Add beef, 1 teaspoon salt, black pepper, and mix well.
  4. Spread beef mixture evenly in the bottom of a 9-inch casserole dish, and bake for 20 minutes.
  5. Cut red potatoes into [1/4]-inch-thick pieces, place in a bowl, and toss with 2 tablespoons extra-virgin olive oil and [1/2] teaspoon salt. Spread potatoes on a baking sheet, and bake for 20 minutes.
  6. In a large bowl, combine Greek yogurt, tahini paste, water, lemon juice, garlic, and remaining 1 teaspoon salt.
  7. Remove beef mixture and potatoes from the oven. Using a spatula, transfer potatoes to the casserole dish. Pour yogurt sauce over top, and bake for 15 more minutes.
  8. In a small pan over low heat, heat remaining 1 tablespoon extra-virgin olive oil. Add pine nuts, and toast for 1 or 2 minutes.
  9. Remove casserole dish from the oven, spoon pine nuts over top, and serve warm with brown rice.
