In this filling stew, warm and soothing green peas are cooked in a tomato sauce with tender carrots and seasoned ground beef.

Serves: 8 cups
Ingredients
  • [1/2] lb. ground beef
  • 3 TB. extra-virgin olive oil
  • 1 large yellow onion, finely chopped
  • 2 TB. garlic, minced
  • 2 cups fresh or frozen green peas
  • 2 large carrots, diced (1 cup)
  • 1 (16-oz.) can plain tomato sauce
  • 2 cups water
  • 1[1/2] tsp. salt
  • 1 tsp. ground black pepper
  • [1/2] cup fresh Italian parsley, finely chopped
Instructions
  1. In a 3-quart pot over medium heat, brown beef for 5 minutes, breaking up chunks with a wooden spoon.
  2. Add extra-virgin olive oil, yellow onion, and garlic, and cook for 5 minutes.
  3. Add peas and carrots, and cook for 3 minutes.
  4. Add tomato sauce, water, salt, and black pepper, and simmer for 25 minutes.
  5. Stir in Italian parsley, and simmer for 5 more minutes.
  6. Serve warm with brown rice.

This dish is great one for kids. It's a good, nutritious way to get little ones to eat some fiber and iron.
