This fried cheese is often served for breakfast and sometimes even as an appetizer. Halloumi has a great brine flavor with texture that holds up to frying.

Serves: 4 slices
Ingredients
  • 6 oz. halloumi cheese
  • 1 TB. extra-virgin olive oil
  • 1 medium Persian cucumber, sliced
  • 1 medium tomato, sliced
  • 10 fresh mint leaves
Instructions
  1. Slice halloumi cheese into 4 equal slices. Layer 2 paper towels, lay out cheese on the paper towels, let it dry for 3 minutes. Turn over cheese, and let dry for 3 more minutes.
  2. Preheat a nonstick pan over medium-low heat. Add extra-virgin olive oil and cheese slices, and cook for 4 minutes per side or until golden brown.
  3. Arrange cheese on a plate with sliced Persian cucumber, sliced tomato, and fresh mint leaves. Enjoy with pita bread.
