Sweet and Savory Couscous
Ingredients
- 3 TB. extra-virgin olive oil
- 1 large white onion, finely chopped
- [1/2] cup pine nuts
- 2 large chopped carrots
- 1 cup green peas
- 1 cup golden raisins
- 5 cups vegetable broth
- 1 tsp. salt
- [1/2] tsp. ground cloves
- [1/2] tsp. ground cinnamon
- [1/2] tsp. ground allspice
- [1/2] tsp. ground ginger
- 1 tsp. seven spices
- 1 tsp. ground coriander seeds
- [1/4] cup fresh parsley, finely chopped
- 2 cups instant couscous
Directions
In a large pot over medium heat, heat extra-virgin olive oil. Add white onion, and cook, stirring with a wooden spoon, for 5 minutes.
Add pine nuts, and cook for 3 more minutes.
Add carrots, green peas, and golden raisins, and cook for 3 minutes.
Add vegetable broth, salt, cloves, cinnamon, allspice, ginger, seven spices, and coriander, and cook for 10 minutes.
Add parsley and couscous, and cook for 2 minutes. Remove from heat, cover, and set aside for 10 minutes. Fluff couscous with a fork, cover, and set aside for 5 more minutes. Serve warm.
When you want to reheat the couscous, add 2 or 3 tablespoons water to it before reheating. This gives it some moisture and helps keep it from clumping.
