Artichokes are native to the Mediterranean area. The earthy green flavor of the artichokes with the citrus garlic dressing in this recipe is refreshing and light.

Serves: 4 artichokes
Ingredients
  • 4 artichokes
  • 6 cups water
  • 2 cloves garlic
  • 1 bay leaf
  • 2 tsp. minced garlic
  • [1/3] cup fresh lemon juice
  • [1/4] cup extra-virgin olive oil
  • [1/2] tsp. salt
  • [1/2] tsp. ground black pepper
Instructions
  1. Using a pair of kitchen scissors, cut off the tips of artichoke leaves. With a sharp knife, cut 1 inch off top of artichokes. Pull off small leaves along base and stem, leaving only a 1-inch stem. Rinse artichokes in cold water.
  2. In a steamer or large saucepan over medium-high heat, bring water, garlic cloves, and bay leaf to a simmer. Add steaming basket, place artichokes inside, cover, and steam for 40 minutes.
  3. In a small bowl, whisk together minced garlic, lemon juice, extra-virgin olive oil, salt, and black pepper.
  4. Transfer artichokes from the steamer to a serving dish, and spoon dressing over artichokes, being sure to get it between leaves.
  5. Serve warm or cold.
Notes
Mediterranean Morsel
Ever eaten an artichoke? They might look complicated, but they're really easy. Simply peel off a leaf and place the white, fleshy part in your mouth. Using your teeth, pull off the pulp portion, and discard inedible part of the leaf.
