Potatoes and Eggs Omelet

This isn't your typical potatoes-and-eggs dish. Seasoned potatoes, ground beef, and spices are cooked into an omelet. It's all you need to start the day.
Servings: 1 omelet
  • [1/4] lb. ground beef
  • 1 large potato, washed and grated
  • 2 TB. extra-virgin olive oil
  • [1/2] tsp. salt
  • [1/2] tsp. seven spices
  • 4 large eggs
  • [1/2] tsp. ground black pepper
  1. In a nonstick pan over medium heat, brown beef for 5 minutes, breaking up chunks with a wooden spoon.
  2. Add grated potato, extra-virgin olive oil, salt, and seven spices, and cook for 7 minutes or until potatoes are lightly browned.
  3. Break eggs into a bowl, and whisk together.
  4. Gently pour eggs into meat and potato mixture.
  5. Using a rubber spatula, slowly push down edges of eggs, letting raw egg form a new layer, and continue for about 2 minutes or until eggs are cooked.
  6. Season with black pepper, and serve warm.
Seven spices is a spice mix used to season many Mediterranean dishes. I share my go-to recipe in Chapter 14.
