Juicy, tender roasted lamb seasoned with bright herbs, lemon juice, and aromatic garlic makes for a dinner to remember.
Servings: 60 ounces
  • 1 (5-lb.) bone-in leg of lamb
  • 10 whole cloves garlic
  • 2 TB. minced garlic
  • [1/3] cup lemon juice
  • [1/3] cup extra-virgin olive oil
  • 2 tsp. salt
  • 1 tsp. ground black pepper
  • 3 TB. fresh rosemary leaves, finely chopped
  1. Preheat the oven to 475ºF.
  2. Using a sharp paring knife, cut 10 ([1/2]-inch) slits into leg of lamb. Stick 1 garlic clove in each slit.
  3. In a small bowl, combine garlic, lemon juice, extra-virgin olive oil, salt, black pepper, and rosemary. Rub dressing all over leg of lamb.
  4. Place the leg of lamb in a roasting pan, and roast for 30 minutes.
  5. Reduce heat to 350ºF, and cook for 1[1/2] more hours.
  6. Remove lamb from the oven and set aside for 20 minutes before cutting and serving.
Tasty Tip
Whenever you're cooking a large piece of meat, it's always good to cook it low and slow. This helps dissolve the meat's connective tissue, which makes the meat tender.
