Mediterranean Doughnuts

These bite-size dough balls are flavored with traditional Mediterranean flavors and a touch of sweetness.
Servings: 3 dozen doughnuts
Ingredients
  • 1 TB. active dry yeast
  • 1 cup warm water
  • 3 TB. sugar
  • 1 large potato, boiled, peeled, and mashed
  • 2 cups all-purpose flour
  • 1 tsp. cinnamon
  • 8 cups vegetable oil
  • 4 cups Simple Syrup (recipe in Chapter 22)
Instructions
  1. In a large bowl, combine yeast, warm water, and sugar. Set aside for 5 minutes.
  2. Add mashed potato, all-purpose flour, and cinnamon, and stir to combine. Cover with plastic wrap, and let sit for 1 hour.
  3. In a large pot over medium heat, bring vegetable oil to 365ºF.
  4. Pour Simple Syrup in a large bowl.
  5. Spoon up about 2 tablespoons dough mixture, drop into hot oil, and fry for 2 or 3 minutes or until dark brown.
  6. Spoon out fried doughnuts from oil, and drop into Simple Syrup to soak for about 5 minutes.
  7. Spoon out doughnuts from Simple Syrup, and place on a plate. Serve at room temperature.
Notes
Mediterranean Morsel
Potato might seem an odd ingredient to have in a dessert recipe! Here, it helps make the doughnuts a bit more dense and also acts as a binder.
