Bulgur Tomato Pilaf

In this dish, earthy bulgur is simmered in a meaty tomato sauce filled with chunks of tomatoes and onions.
Servings: 6 cups
  • 1 lb. ground beef
  • 3 TB. extra-virgin olive oil
  • 1 large yellow onion, finely chopped
  • 2 medium tomatoes, diced
  • 1[1/2] tsp. salt
  • 1 tsp. ground black pepper
  • 2 cups plain tomato sauce
  • 2 cups water
  • 2 cups bulgur wheat, grind #2
  1. In a large, 3-quart pot over medium heat, brown beef for 5 minutes, breaking up chunks with a wooden spoon.
  2. Add extra-virgin olive oil and yellow onion, and cook for 5 minutes.
  3. Stir in tomatoes, salt, and black pepper, and cook for 5 minutes.
  4. Add tomato sauce and water, and simmer for 10 minutes.
  5. Add bulgur wheat, and cook for 2 minutes. Remove from heat, cover, and let sit for 5 minutes. Uncover, fluff bulgur with a fork, cover, and let sit for 5 more minutes.
  6. Serve warm.
Tasty Tip
If you like things spicy, add some crushed red pepper flakes to this recipe. Or serve with a finely chopped jalapeño pepper on top.
