Watermelon Salad

This salad brings me memories of hot summer nights, sitting on the porch with my dad, and eating watermelon and feta cheese. The sweetness of the watermelon and the saltiness of the feta complement each other nicely.
Servings: 10 cups
  • 1 (5-lb.) seedless watermelon
  • 4 oz. feta cheese, crumbled
  • 3 TB. fresh mint, finely chopped
  • 3 TB. extra-virgin olive oil
  • 2 TB. fresh lemon juice
  1. Scoop watermelon into balls, or cut into [1/2]-inch cubes.
  2. In a large bowl, add watermelon and feta cheese.
  3. In a small bowl, combine mint, extra-virgin olive oil, and lemon juice.
  4. Pour dressing over watermelon and feta, and toss gently.
  5. Serve immediately.
Tasty Tip
Watermelon is crispy and refreshing … but not when it's soggy. When serving or prepping watermelon, cut it right before serving to ensure the best taste and texture.
