I love making this recipe when I'm in the mood for pizza but not for all that melted cheese. The peppery arugula and the pungent goat cheese flavor this pizza in a very unique way.

Ingredients
1 (12-in.)premade flatbread
3 TB. extra-virgin olive oil
[1/2] tsp.salt
[1/2] tsp. ground black pepper
2roma tomatoes, thinly sliced
5 oz.goat cheese
12kalamata olives, sliced
2 cups fresh arugula
3 TB.balsamic vinegar
Instructions
Preheat the oven to 400ºF.
Place flatbread on a pizza pan or baking sheet. Drizzle with 2 tablespoons extra-virgin olive oil, and sprinkle with salt and black pepper.
Evenly distribute roma tomato slices over flatbread, crumble goat cheese on top, and sprinkle with kalamata olives. Bake for 10 minutes.
Meanwhile, in a small bowl, toss arugula, remaining 1 tablespoon extra-virgin olive oil, and balsamic vinegar.
Remove pizza from the oven, and cut into 8 slices. Top with arugula, and serve warm.
Notes
Tasty Tip If you don't like goat cheese, you can replace it with feta cheese.
