Ghallaba Stew
Recipe type: Soothing Stews
Serves: 10 cups
- 4 TB. extra-virgin olive oil
- 2 (8-oz.) boneless skinless chicken breasts, cut into [1/2]-in. cubes
- 1 large red onion, chopped
- [1/2] large yellow bell pepper, ribs and seeds removed, and chopped
- [1/2] large red bell pepper, ribs and seeds removed, and chopped
- [1/2] large green bell pepper, ribs and seeds removed, and chopped
- 1 cup crimini mushrooms, sliced
- 3 large carrots, sliced
- 1[1/2] tsp. salt
- 3 TB. minced garlic
- 3 cups plain tomato sauce
- 2 cups water
- 1 tsp. paprika
- 1 tsp. cayenne
- 1 tsp. ground black pepper
- [1/2] cup fresh parsley, finely chopped
- 1 TB. sumac
- In a large, 3-quart pot over medium heat, heat extra-virgin olive oil. Add chicken, and cook for 5 minutes.
- Add red onion, yellow bell pepper, red bell pepper, green bell pepper, crimini mushrooms, carrots, and salt, and cook for 5 minutes.
- Add garlic, tomato sauce, water, paprika, cayenne, black pepper, and parsley. Stir and simmer for 10 minutes.
- Serve warm with a sprinkle of sumac and a side of pasta or rice.
Definition
Sumac is the fruit of a flowering plant that's dried and ground. It has a tart, tangy flavor.
