Preheat the oven to 400ºF. Flour a rolling pin and your counter.
Divide Multipurpose Dough into 6 equal portions, and roll out dough into 6- to 8-inch-diameter circles.
In a medium bowl, combine kashkaval cheese and mozzarella cheese. Divide cheese mixture into 6 portions, and sprinkle on each dough circle.
Place pizzas onto a baking sheet, and bake for 8 to 10 minutes or until cheese begins to bubble.
Remove pizzas from the oven, fold each pizza in half, and enjoy as is or with Yogurt Spread

Definition Kashkaval cheese is a semihard yellow Bulgarian cheese that has a very bold flavor. Kashkaval comes in two types. One is made with cow's milk, and one is made with sheep's milk. If you like a more pungent flavor, use the sheep's milk version.
