This isn't your typical potatoes-and-eggs dish. Seasoned potatoes, ground beef, and spices are cooked into an omelet. It's all you need to start the day.

Serves: 1 omelet
Ingredients
[1/4] lb. ground beef
1 large potato, washed and grated
2 TB. extra-virgin olive oil
[1/2] tsp.salt
[1/2] tsp.seven spices
4 large eggs
[1/2] tsp. ground black pepper
Instructions
In a nonstick pan over medium heat, brown beef for 5 minutes, breaking up chunks with a wooden spoon.
Add grated potato, extra-virgin olive oil, salt, and seven spices, and cook for 7 minutes or until potatoes are lightly browned.
Break eggs into a bowl, and whisk together.
Gently pour eggs into meat and potato mixture.
Using a rubber spatula, slowly push down edges of eggs, letting raw egg form a new layer, and continue for about 2 minutes or until eggs are cooked.
Season with black pepper, and serve warm.
